Allspice
Allspice is a small dark, reddish-brown berry that has a dynamic aroma and flavor that resembles a combination of cinnamon, cloves and nutmeg. While it is usually used in pickles and molasses cookies, it is rumored to be the secret ingredient in the BEST fried fish. Whether you make a batter or use breading, add a pinch of allspice before coating your fish. Below is a recipe for fish fry spices using allspice.
Ingredients
- 2 tablespoons paprika
- 1 tablespoon onion salt
- 1 teaspoon celery salt
- 1 teaspoon rubbed sage
- 1 teaspoon garlic powder
- 1 teaspoon ground allspice
- 1 teaspoon ground oregano
- 1 teaspoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon basil leaves, crushed
- 1 teaspoon marjoram leaves, crushed finely
Instructions
Combine all the above ingredients in a jar with a tight fitting lid. Shake mixture to combine. Spice mix will store for months. Keep out of direct sunlight, heat and humidity.
To make the fish fry coating:
Mix together 4 teaspoons fish fry spice mixture, 1 cup flour, 2 Tbls. packed light brown sugar and 1 teaspoons salt. Place in a doubled plastic food bag and add fish to coat. Shallow fry, drain on paper towels and serve.
